Terrain A deep red, full of iron formed during the Pleistocene era and limestone appearing in the Palaeocene – Eocene era. .
Vine training system Guyot.9.800 vines per hectare at low share: 3 bunches per vine.
Prevention on vineyard In the last 20 days of maturation the grape is treaten with emulsions of propoli that work as antiseptic against fungus attacs like botrytis and rotten acid.
Wine-making The grapes are picked by hand in the last weeks of September and the first weeks of October. The maceration lasts a few hours at a controlled temperature.
Processing After fermentation the wine is left in steel vats for a few months.
Characteristics A pale yellow, this young wine has a delicate bouquet of fruit leaving a feeling of freshness in the mouth.
Drink with It is excellent as an aperitif and goes well with crostini con pancetta, delicate risottos and main fish courses.

The wine is elegant, with delicate fruity aromatics reminding on dry grass and dry fruits, almonds particularly, that achieves only after 2-3 years from the harvest.
On the palate is evident the typical acidity that gives to the wine freshness and long lasting feeling.
Vitovska is an ancient native variety from The Karst, one of the “border varieties” as cultivated in Italy and Slovenia.
The producers who cultivate it are very less.
The variety itself needs a longer ageing, this is why we recommend to taste it after 2 - 3 years from harvest.
